Too Good To Go makes it easy to rescue surplus food from cafés, bakeries and supermarkets – like day-old croissants. Instead of letting them go to waste, turn them into golden almond croissants in your pizza oven: crisp on the outside, soft and rich inside. A true treat – and a simple step towards reducing food waste!
- Slice croissants lengthwise and set aside.
- For the syrup, bring sugar and water to a boil, then let cool.
- Mix all almond filling ingredients until smooth.
- Brush both inner sides of the croissants generously with syrup.
- Fill each with 1–2 tbsp of almond cream, close, and spread 1–2 tsp on top. Press on flaked almonds.
- Wrap in foil and bake in the front of your Ooni at the lowest setting for 10–15 mins (ideally in a baking pan). Then bake 1–2 mins uncovered until golden.
- Dust with icing sugar and enjoy warm.
