Almond Croissants

Craving something new from your pizza oven? These almond croissants might just be the best you’ve ever had! In a few easy steps, you’ll turn rescued croissants into a warm, irresistible treat that’s sure to surprise. The key? They shouldn't be fresh – ideally 1–2 days old and slightly dry. Perfect for Too Good To Go and your Ooni!

Too Good To Go makes it easy to rescue surplus food from cafés, bakeries and supermarkets – like day-old croissants. Instead of letting them go to waste, turn them into golden almond croissants in your pizza oven: crisp on the outside, soft and rich inside. A true treat – and a simple step towards reducing food waste!

  1. Slice croissants lengthwise and set aside.
  2. For the syrup, bring sugar and water to a boil, then let cool.
  3. Mix all almond filling ingredients until smooth.
  4. Brush both inner sides of the croissants generously with syrup.
  5. Fill each with 1–2 tbsp of almond cream, close, and spread 1–2 tsp on top. Press on flaked almonds.
  6. Wrap in foil and bake in the front of your Ooni at the lowest setting for 10–15 mins (ideally in a baking pan). Then bake 1–2 mins uncovered until golden.
  7. Dust with icing sugar and enjoy warm.
