Serves four as an appetiser or side dish
280g (9oz) pizza dough ball (see note below)
100g (3.05oz) shredded mozzarella
5 tbsp pizza sauce (see note below)
50g (1.7oz) fresh mozzarella, torn into small pieces
1 tbsp parmesan, grated
2 basil leaves, torn

For the sauce for this pizza, we recommend preparing our easy Ultimate Pizza Sauce. With a hint of garlic, salt and basil, it's the ideal pizza sauce that will help bring out the flavours in the other ingredients used here.
Once your dough and sauce are ready, fire up your Ooni pizza oven. Aim for 450˚C (840˚F) on the stone baking board inside. You can check the temperature inside your oven quickly and easily using the Ooni Infrared Thermometer.
Using a small amount of flour, dust your Ooni pizza peel. Stretch the pizza dough ball out to 12" and lay it out on your pizza peel.
Using a pizza cutter or knife, make incisions into the dough. These should each be 2 inches long, made evenly around the edge of the pizza base, like the marks on a clock face.
Now, fill each of the 8 sections in between the incisions to make a stuffed crust. Place a teaspoon of pizza sauce in each section, and top with a teaspoon of the grated mozzarella.
Don’t put too much cheese on top of the crust or you won’t be able to fold the edges of each section of dough together.
Carefully pick up the corners of the first section of dough, pinch the edge of the pizza base together and toward the corners of that section, and gently pull the pinched corners down and towards the centre of the pizza base. This will form a triangle shape, with the edge of the triangle shape pointing outwards. Repeat for each section of dough to form an eight-pointed star.
In the middle of the pizza base, top the dough with the remaining pizza sauce and mozzarella.
Slide the pizza off the peel and into your Ooni pizza oven, making sure to rotate the pizza regularly.
Once cooked, remove the pizza from the oven, and finish with the basil. Tear, share, and enjoy with family and friends.
