Prawn, Garlic, and Avocado Salad

Grab your cast iron pan, and fire up these deliciously garlicky prawns. Toss over a bed of sweet salad, fresh herbs and creamy avocado. Delightfully light and versatile, just like Ooni pizza ovens!

Equipment
Cast Iron Pan

Ingredients
450g (16oz) raw prawns, shells off
1-2 cloves of garlic, crushed
2 chillies, chopped
handful of fresh parsley, plus extra to garnish
4 tsp mixed seeds
6 tsp olive oil
Fresh salad leaves
1 avocado, sliced
Juice of half a lemon

Method
Rinse and drain your prawns in cold water. In a large bowl, add the prawns, seeds, garlic, oil, parsley and chopped chilli. Mix together thoroughly with your hands, then leave to marinate for 30 minutes covered in the refrigerator. 

Fire up your Ooni pizza oven. Aim for 500˚C (952˚F) on the stone baking board inside. You can check the temperature inside your Ooni quickly and easily using the Ooni Infrared Thermometer.

Place your Cast Iron Pan in the Ooni to preheat with a tablespoon of olive oil. After 1-2 minutes, remove the pan and add your marinated prawns. Cook the prawns in the oven for 2-3 minutes, or until golden brown. Try to give the pan a shake halfway, to ensure the prawns cook evenly.

Once cooked, remove the pan from the oven and set aside. Toss over your salad and chopped avocado, finishing with a sprinkle of parsley, a squeeze of lemon, and a dash of olive oil. Serve immediately for that beautiful balance of hot & cold and sweet & spicy.
