1: Prepare your pizza dough ahead of time.
Our guide to making the perfect Classic Pizza Dough covers everything you need to know.
2: For the sauce for this pizza, we recommend preparing our easy Classic Pizza Sauce.
With a hint of garlic, salt and basil, it's the ideal pizza sauce that will help to bring out the flavour in the other ingredients used here.
3: Prepare the garlic & herb drizzle.
In a bowl, combine the lemon, mayo, garlic and salt. Add the herbs, crushing them with your fingers as they’re added to release their fragrance. Mix until well combined, then decant into a condiment bottle and leave for a few hours to infuse in the fridge.
4: Next, prepare the vegan nduja.
In a bowl, add all the ingredients and combine using your hands until well mixed. Place the mixture onto a piece of plastic wrap and wrap up into a ball, twisting off the end to seal it. Refrigerate for one hour.
5: Fire up your Ooni pizza oven.
Aim for 500˚C (950˚F) on the stone baking board inside. You can check the temperature inside your oven quickly and easily using the Ooni Infrared Thermometer.
6: Using a small amount of flour, dust your Ooni Pizza Peel.
Stretch the pizza dough ball out to 12”/16” and lay it out on your pizza peel.
7: Top the pizza base with the pizza sauce, roast butternut squash, vegan nduja, mozzarella and red onion.
8: Slide the pizza off the peel and into your Ooni pizza oven, making sure to rotate the pizza regularly.
9: Once cooked, remove the pizza from the oven.
Finish with the pine nuts, and as much of the garlic & herb drizzle as you like. Serve hot!
