This delicious vegetarian pizza from Pizza Taste Tester, Julian Guy, is all things sweet and spicy. Prep your own vegan nduja using vegetarian sausage, and finish it all off with a garlicky, herby sauce. It’s the perfect veggie meal!
Method
Prepare your pizza dough ahead of time. Our guide to making the perfect Classic Pizza Dough covers everything you need to know.
For the sauce for this pizza, we recommend preparing our easy Classic Pizza Sauce. With a hint of garlic, salt and basil, it's the ideal pizza sauce that will help to bring out the flavour in the other ingredients used here.
Prepare the garlic & herb drizzle. In a bowl, combine the lemon, mayo, garlic and salt. Add the herbs, crushing them with your fingers as they’re added to release their fragrance. Mix until well combined, then decant into a condiment bottle and leave for a few hours to infuse in the fridge.
Next, prepare the vegan nduja. In a bowl, add all the ingredients and combine using your hands until well mixed. Place the mixture onto a piece of plastic wrap and wrap up into a ball, twisting off the end to seal it. Refrigerate for one hour.
Fire up your Ooni pizza oven. Aim for 500˚C (950˚F) on the stone baking board inside. You can check the temperature inside your oven quickly and easily using the Ooni Infrared Thermometer.
Using a small amount of flour, dust your Ooni Pizza Peel. Stretch the pizza dough ball out to 12”/16” and lay it out on your pizza peel.
Top the pizza base with the pizza sauce, roast butternut squash, vegan nduja, mozzarella and red onion.
Slide the pizza off the peel and into your Ooni pizza oven, making sure to rotate the pizza regularly.
Once cooked, remove the pizza from the oven. Finish with the pine nuts, and as much of the garlic & herb drizzle as you like. Serve hot!
