Method
For the spiced honey:
Fire up your Ooni oven, aiming for 450 °C (660 °F). Use an infrared thermometer to check the temperature of your baking stone for a fast, accurate reading.
In a small bowl, mix 20 grams of liquid honey with 2.5 grams cayenne pepper; adjust accordingly to taste if needed. Set aside.
For the pizza:
On a well-floured work surface, roll out your dough into a 12-inch circle (30 centimetres).
Gently slide the dough onto a lightly-floured pizza peel.
Use a spoon to spread the cream over your dough in a circular motion; then evenly sprinkle on the mozzarella, followed by the thick slices of goat cheese.
Launch the pizza into your oven and cook for 60 to 90 seconds, rotating every 20 seconds to ensure an even bake.
Take the pizza out of the oven, slide it onto your serving board and garnish with raisins, mint leaves and a few splashes of spiced honey. Slice, serve and bon appétit!
