Vegetarian Goat’s Cheese and Spiced Honey Pizza

Because of the high quality and variety of goat’s cheese and honey made in France, the chèvre-miel (goat’s cheese-honey) pizza is perhaps the most French of all pizzas. Beloved by many, including French pizza blogger, Fabien Rius (@Pizza.Cornicione), we thought this classic deserved to be revisited. Since 2018, Rius has worked on his Neapolitan pizza skills, sharing proper protocols and also fillings, and in this version of the goat’s cheese-honey pizza, he uses a base of fresh cream and fior di latte mozzarella for maximum texture and creaminess, plus a few topping surprises for fun.


As far as goat’s cheese is concerned, ashy goat’s cheese, with its strong taste and flavour post-bake, is quite popular in France, but really, any soft variety here will work great. When slicing the cheese, make sure to be generous with the thickness, for a hearty, textured bite. Combining that with spicy honey adds a touch of sweet and spice to your pizza. And for the finishing touches, we added raisins and fresh mint leaves for a modern approach. Simple, elegant and most importantly, delicious.

While any type of dough would work well with this recipe, we recommend our Neapolitan pizza dough - just be sure to set aside 3 to 4  hours before cooking to allow the dough time to proof.
