  1. Prepare the pizza dough as desired.
  2. Halve the bell peppers and remove the stems and seeds.
  3. Roasting the peppers in the Ooni pizza oven:
    Wrap the peppers in aluminum foil and roast them on the lowest heat setting in your Ooni for about 20 minutes, until soft.

    Roasting the peppers in a conventional oven:
    Preheat the oven to 250°C (480°F). Place the peppers skin-side up on a baking sheet. Roast for about 20 minutes, until the skin turns black and blisters.
  4. Let the peppers cool, then peel off the skin.
  5. Slice the eggplants into approx. 0.5 cm thick rounds. Salt the slices and let them sit on a paper towel for a few minutes to draw out moisture. Then roast them with a bit of olive oil in the Ooni cast iron pan in your Ooni pizza oven (or alternatively in a conventional oven).
  6. Stretch each dough ball into a pizza base.
  7. Spread the roasted pepper sauce over the dough. Distribute the cheese evenly, then top with the roasted eggplant slices.
  8. Bake in the preheated Ooni for about 2 minutes, turning regularly.
  9. After baking, place half a ball of fresh buffalo mozzarella on each pizza and optionally drizzle with herb oil.
