Olive, Sundried Tomato, and Rocket Pizza

This pizza will convince even the most avid meat eaters that veggie pizzas ARE cool! It’s super easy, and is packed with all the sun-kissed flavours of the mediterranean: salty olives, tangy sun dried tomatoes and fiery rocket, topped with nutty parmesan shavings.

Makes 1x 12”/16” pizza

160g/240g (5.6/8.5oz) classic pizza dough 
4-5 tbsp classic pizza sauce
Handful fresh rocket
8-10 olives, halved 
5-6 sundried tomatoes
80g (2.8oz) mozzarella, sliced
50g (1.8oz) parmesan shavings

For the sauce for this pizza, we recommend preparing our easy Classic Pizza Sauce. With a hint of garlic, salt and basil, it's the ideal pizza sauce that will help to bring out the flavours in the other ingredients used here.

Fire up your Ooni pizza oven. Aim for 500˚C (950˚F) on the stone baking board inside. You can check the temperature inside your Ooni quickly and easily using the Ooni Infrared Thermometer.

Using a small amount of flour, dust your Ooni pizza peel. Stretch the pizza dough ball out and lay it out on your pizza peel. Using a large spoon or ladle, spread an even layer of sauce across the base of your pizza. Add some mozzarella slices, then top with the olives and sundried tomatoes.

Slide the pizza off the peel and into your pizza oven. Cook for 1-2 minutes, making sure to turn the pizza regularly. 

Once cooked, retrieve the pizza from the oven and cover with a shower of parmesan shavings and rocket. Finally, season with some crushed black pepper and a drizzle of olive oil, or chilli oil if you prefer!
