Courgette Ribbon Pizza with Spring Onions and Garlic Butter

This season, it’s all about courgette. Cascading courgette ribbons layer over a garlic butter base in this dreamy pizza from @hunterandheels. Topped with sliced spring onions and flame cooked in Ooni pizza ovens, finished with a garnish of fresh lemon zest, chilli flakes, and smoked salt. 

Makes 1x 12”/16” pizza

For the garlic butter
100g (1 stick) unsalted softened butter
3 garlic cloves, crushed
Handful parsley, finely chopped
Pinch salt and pepper

For the pizza
250/330g (8.8/11.6oz) classic pizza dough 
1 courgette, peeled lengthways into ribbons
1-2 spring onions, finely sliced lengthways
60g (2.1oz) low moisture mozzarella 
½ tsp chilli flakes 
Zest of 1 lemon
Pinch smoked salt

In a bowl, combine the softened butter, minced garlic, chopped parsley, salt, and pepper. Set aside at room temp. 

Fire up your Ooni pizza oven. Aim for 500˚C (952˚F) on the stone baking board inside. You can check the temperature inside your Ooni quickly and easily using the Ooni Infrared Thermometer.

Using a small amount of flour, dust your Ooni pizza peel. Stretch the pizza dough ball out and lay it out on your pizza peel. With a metal spoon, spread an even layer of garlic butter across the base. Top with mozzarella, courgette ribbons, and sliced spring onion. 

Slide the pizza off the peel and into your Ooni pizza oven. Cook for 1-2 minutes, making sure to turn the pizza regularly to ensure an even cook. 

Once cooked, remove the pizza and top with fresh lemon zest, smoked salt, and chilli flakes. Serve and enjoy immediately!
