Buffalo Chicken Pizza

When it comes to buffalo chicken pizza, you’ve got to do it right. That’s why this recipe from ambassador Josh Tahan (@truecraftbbq) doesn't skimp on quality. Some restaurants or take outs might use breast meat flavoured with sauce, but not this pizza. Using authentic grilled buffalo chicken wings, the succulent, spicy meat perfectly compliments tangy blue cheese and crunchy celery. For the signature Tahan twist, stretch the dough a little thicker and fold after cooking for a next-level buffalo chicken sandwich! 

Makes 1 x 12”/16” pizza

220g/320g (7oz/ 11.3oz) Classic Pizza Dough ball
Meat from 4-5 cooked Buffalo Wings (grilled or fried, pre-sauced)
Crumbled Blue Cheese, to taste
Buffalo Sauce, to taste
Shaved Celery to garnish (long, thin pieces peeled into ribbons using a vegetable peeler)

Fire up your Ooni pizza oven. Aim for 500˚C (932˚F) on the stone baking board inside. You can check the temperature inside your Ooni quickly and easily using the Ooni Infrared Thermometer.

Stretch your dough thin (if serving as a pizza) or leave a bit thicker (if serving folded in half like a sandwich). The thicker dough will result in a thicker crust after cooking – allowing you to fold the pizza in half and eat it like a sandwich. By utilising a thicker base you can add more chicken wing meat to the dough, without fear of generating any tears in the base when you launch the pizza into your oven!

Lightly dust your Ooni pizza peel and lay your stretched dough on top. Top first with your cheese, sprinkling it evenly over the entire surface of the dough. Then, add your buffalo wing meat to taste. Drizzle about 1-2 tbsp of buffalo sauce over the entire pizza. Try to avoid saturating the pizza with sauce – the heat will loosen and spread the sauce over the pizza while it is cooking, so best to go lighter than you think with the drizzle!

Slide the pizza off the peel and into your Ooni pizza oven. Cook for 1-2 minutes to your liking, turning regularly. Remove the pizza from the oven and add some shaved celery (a popular accoutrement to wings) on top. Trust us on this one, the added texture takes this pizza to the next level!

Serve warm, as you like it – either folded like a sandwich or traditionally sliced. Don’t let its simplicity fool you, this is a flavour bomb!
