Blackberry, Ricotta & Pistachio Pizza
Makes 1x 12”/16” pizza
250/330g (8.8/11.6oz) classic pizza dough
50g (1.3oz) blackberries
40g (2 tablespoons) pistachios, ground
40ml (2 tablespoons) honey
120g (4.3oz) ricotta

Once your dough is ready, fire up your Ooni pizza oven. Aim for 500˚C (950˚F) on the stone baking board inside. You can check the temperature inside your Ooni quickly and easily using the Ooni Infrared Thermometer.
In a small bowl, mix the ricotta together with one tablespoon of the honey. Set aside.
Using a small amount of flour, dust your Ooni pizza peel. Stretch the pizza dough ball out to 12”/16” and lay it out on your pizza peel. Spread the ricotta mixture evenly across the pizza base and top with the blackberries.
Slide the pizza off the peel and into your Ooni, making sure to rotate the pizza regularly.
Once cooked, remove the pizza from the oven. Top with the pistachios and a drizzle of the remaining honey. Serve straight away!
