Prepare the dough
- Defrost: Let the Freda dough balls thaw in the Ooni Volt 2 at about 40°C (or the lowest warming setting) for around 2 hours.
- Shaping: Lightly flour a clean work surface—ideally with semolina or fine flour—and gently shape the dough ball from the inside out into a pizza, leaving the edge slightly thicker.
Top the pizza
- Evenly distribute the pieces of mozzarella and gorgonzola over the dough.
- Spread the sliced semi-dried tomatoes on top.
- Sprinkle a tablespoon of grated Parmesan over the toppings.
- Tip: Since gorgonzola and Parmesan are already quite salty, you usually won’t need any extra salt.
Bake in the Ooni Volt 2
- Preheat the Ooni Volt 2 on the Neapolitan Pizza preset.
- Slide the topped pizza into the preheated oven using a pizza peel.
Finishing touches
- Once the pizza is fully baked, place the burrata ball in the centre and sprinkle the pine nuts over the top.
- Finish generously with Freda garlic oil and garnish with a basil leaf.
