- Prepare the sugar syrup: In a large saucepan, combine the sugar, 190ml (6fl oz) cold water, salt, and the golden syrup/corn syrup. Heat over a medium heat, stirring gently until the sugar has fully dissolved. Increase the heat and boil the mixture without stirring until it reaches 240°F (115°C) on a sugar thermometer. This should take around 15-20 minutes.
- Prepare the gelatine mixture: While the sugar syrup is heating, sprinkle the gelatine into the bowl of the Halo Pro Spiral Mixer and add 190ml (6fl oz) cold water. Allow the gelatine to soak for a few minutes then briefly whisk on low speed to combine: 40% power (165 rpm) for 30 seconds.
- Combine and whisk: Once the sugar syrup reaches 240°F (115°C) remove from the heat. Slowly and carefully pour the hot sugar syrup into the gelatine mixture while the mixer is running on low speed (40% power or 165 rpm). Once combined, increase the speed to high (80% or 285 RMP) and whisk for 10 minutes. Increase the speed to 100% power (345 rpm) for 3-5 minutes or until the mixture is thick, glossy and pale. If you’re using food coloring, add a few drops during this stage.
- Add flavour and set: When the marshmallow mixture is ready, whisk in the vanilla extract for 1 minute. Lightly oil and dust with icing sugar a 13x10-inch pan, just like the Ooni Detroit-Style Pizza Pan. Pour the marshmallow mixture into the dish and smooth the surface with a spatula. Dust the top with more sifted icing sugar and let it set uncovered at room temperature for at least 9 hours, but ideally overnight.
- Cut and coat: Run a sharp knife around the edges of the marshmallow to loosen it. Dust a cutting board with icing sugar and invert the marshmallow onto it. Coat a sharp knife with icing sugar to prevent sticking and cut the marshmallow into squares. Cover the marshmallow pieces in a bowl of sifted icing sugar to coat all sides. As these are fresh, eat within the next few days for the best experience. Store in a sealable container for up to 5 days.
