White Pizza with Gorgonzola, Burrata & Garlic Oil

This Pizza Bianca brings together creamy Gorgonzola, fresh Burrata, and aromatic garlic oil for a rich and satisfying flavor experience. The handy FREDA dough balls make the base effortless, perfectly thawed and shaped on a lightly floured surface. The highlight: baking in the Ooni Volt 2 delivers even heat and a wonderfully crisp crust that carries the toppings beautifully. Semi-dried tomatoes, Parmesan, and pine nuts add depth, while the Burrata in the center and a generous drizzle of garlic olive oil finish the pizza with creamy, aromatic perfection. A simple yet indulgent dish that tastes like it came straight from a professional pizzeria.

Note

FREDA is a young brand shaking up the frozen food aisle: their perfectly portioned frozen pizza doughs are ideal for anyone looking to effortlessly step into the world of truly great pizza. Beyond that, FREDA offers an exciting range of frozen products – from pasta and pizza to desserts and gelato – all crafted with care, high-quality ingredients, and a creative touch. In no time, your freezer turns into a mini gourmet kitchen.

Prepare the dough

  • Defrost: Let the Freda dough balls thaw in the Ooni Volt 2 at about 40°C (or the lowest warming setting) for around 2 hours.
  • Shaping: Lightly flour a clean work surface—ideally with semolina or fine flour—and gently shape the dough ball from the inside out into a pizza, leaving the edge slightly thicker.

Top the pizza

  • Evenly distribute the pieces of mozzarella and gorgonzola over the dough.
  • Spread the sliced semi-dried tomatoes on top.
  • Sprinkle a tablespoon of grated Parmesan over the toppings.
  • Tip: Since gorgonzola and Parmesan are already quite salty, you usually won’t need any extra salt.

Bake in the Ooni Volt 2

  • Preheat the Ooni Volt 2 on the Neapolitan Pizza preset.
  • Slide the topped pizza into the preheated oven using a pizza peel.

Finishing touches

  • Once the pizza is fully baked, place the burrata ball in the centre and sprinkle the pine nuts over the top.
  • Finish generously with Freda garlic oil and garnish with a basil leaf.
